Black Bean and Pea Salad✿Serves 4Ingredients450g green pea450g black bean(cooked or 200 g dried and cooked by yourself)1bunch chiveFor the Dressing:0.5cup yogurt1.5 tbsp Dijon mustard1 tsp salt2 cloves of garlic1 lemonOptional Toppings:200g Feta cream4 eggs(cooked until tender, 1 per serving)1 Pinch dillInstructionsMix all the ingredients for the dressing in a small bowl. If necessary, add a little water until a flowing but not too thin consistency is achieved.Place green pea, black bean, and chive in a large bowl. Drizzle with dressing and mix thoroughly.Season with salt.To ServeAs a main dish: serve with Feta cream and egg. Optionally, use dill instead of chive.TipsInstead of black beans, beluga lentils also work well.
