French Potato Salad with Fried Egg, Radishes & Honey-Mustard Dressing

For the Salad:

• 400g potato(cooked)
• 5 radishes
• 1 onion(red)
• 100g feta
• 2 eggs

For the Dressing:

• 2 tsp mustard(e.g. Dijon mustard)
• 1 tsp honey
• 2 tsp white wine vinegar
• 3 tbsp olive oil
• 1 Pinch salt
• 1 Pinch pepper

1. Slice the potato. Shave radish into thin slices. Peel onion, halve it, and cut it into fine strips.

2. Mix mustard, honey, and white wine vinegar in a small bowl. Gradually whisk in the olive oil until a creamy dressing forms. Season with salt and pepper to taste.

3. Place potato, radish, and onion in a large bowl. Drizzle with the dressing and gently mix. Crumble feta on top.

4. Heat olive oil in a pan and fry egg sunny-side up. Season with salt and pepper.

5. Arrange the salad on plates and place egg on top of each.
