Fresh White Cabbage Salad with Celery-Lemon Oil

• 0.25 cabbage(approximately 200-250 g)
• 1 celery
• 2 tbsp olive oil
• 1 tsp lemon zest
• 1 tsp lemon juice
• 1 Pinch parsley

Preparation

1. Remove the cabbage from the core and cut it into very thin strips using a mandoline or knife. Place it in a bowl, lightly salt it, and knead it vigorously with your hands until it becomes a bit softer.

2. Cut 1stalk celery into very fine cubes.

For the Lemon Oil:

1. Mix olive oil with lemon zest, lemon juice, a pinch of salt, and some pepper.

2. Stir in celery – this creates an aromatic herb oil.

3. Pour olive oil over cabbage and mix well.

4. Let it steep for at least 15 minutes, preferably longer. Taste again and serve.
