Cut into bite-sized cubes.Salt and let drain for 20 minutes.Peel the carrot, finely grate it, and place it in a salad bowl.Grate the red cabbage finely or cut it into thin strips. Wash it and add to the carrot.Coarsely chop or grind the peanut in a blender and set them aside.SauceThrow everything into a mixer, add 50 ml of water, and puree. Alternatively, grate/chop the ginger and garlic finely and mix with the liquid ingredients.Cooking NoodlesCook the glass noodle according to the package instructions for about 3-5 minutes.Briefly rinse with cold water and add to the salad.PlatingPat the cucumber dry briefly and add it to the salad.
