Lemon Blondies with Meringue Topping from the Omnia Oven – moist, sweet & easy

• 125g butter
• 175g sugar
• 1 egg(room temperature, size M)
• 1 egg yolk
• 1 lemon(Zest + 2 tablespoons juice)
• 150g flour
• 1 Pinch salt

Ingredients

• 75g strawberry

Meringue

• 1 egg white
• 50g powdered sugar
• 1 Pinch salt

1. Melt the butter and let it cool briefly.

2. Then stir in sugar with a wooden spoon or silicone spatula.

3. Now stir in egg along with egg yolk.

4. Fold in the lemon, as well as flour and salt, until a homogeneous mixture forms. Do not mix too much.

Meringue Topping (optional)

1. Whisk 1u egg white with salt until they start to become frothy.

2. Gradually add 50g powdered sugar while continuing to beat (with a hand mixer or whisk) until the mixture is white, shiny, and stiff. This can take 4–6 minutes.

Baking in the Omnia

1. Lightly sprinkle the silicone mold for the Omnia with sugar. 1pcs strawberry.

2. Fill the dough into the silicone mold, smooth it out slightly, and optionally press strawberry into it.

3. Optional: dot the meringue onto the dough.

4. Then bake on low to medium heat for about 30 minutes. Note: The blondies may still seem a bit soft inside, but that's how it's supposed to be. If in doubt, bake for a shorter time rather than longer. Allow the blondies to cool.

Alternative Oven

1. Preheat the oven to 175°C (347°F) with both top and bottom heat. Line a 20x20 cm baking pan (please do not use a larger one, as the blondies will be quite flat) with baking paper, preferably crisscrossed so that the blondies can be easily lifted out of the pan later.

2. Spread the flour in the baking pan and optionally press strawberry into it.

3. Then bake on the middle rack for about 30-35 minutes. The blondies will still seem a bit soft, but just like with brownies, that's how it should be.

4. Optional: After 15 minutes of baking time, dot the meringue onto the blondies and continue baking. The surface will turn light brown and remain soft inside, resembling marshmallows.

5. Let the blondies cool down. And serve. Serve with lemon if desired.
