Peach Serrano Flatbread✿Serves 2IngredientsFor the Dough170g flour(Type 550 flour)30g olive oil60ml lukewarm water1 Pinch saltTopping and Sauce60g cream cheese1 tsp thyme1 garlic clove1 Pinch of salt100g Mozzarella(grated)1 tsp chopped basil2 peaches50g Serrano ham1 tbsp honey1 Pinch pepperInstructionsFor the dough, combine flour in a bowl, knead well, and let rest covered until the remaining ingredients are prepared.Preheat the oven to 250 °C with convection, including the baking tray.For the sauce, mix all the ingredients including garlic clove and adjust to taste; the sauce can be a bit salt.Divide the dough into two parts and roll each out very thinly on a flour, also spreading it a bit with your hands if you like.Place on a baking paper, spread thinly with sauce, and sprinkle with Mozzarella.Cut the peach into thin slices and spread them on the tart.Bake in the oven for 5-10 minutes (depending on size) until crispy.Then drizzle with honey.
