Smacked Cucumber Salad✿5 minutes preparation time5 minutes cooking timeServes 2Ingredients1 cucumber300g glass noodleSauce2 cloves of garlic1 tsp ginger3 tsp soy sauce3 tsp balsamic vinegar(Vinegar)0.5 tsp chili oil(or chili flakes)1 tsp black sesame1 tsp sesame oil2 tsp agave syrup1 tbsp peanut butter(or sesame butter)Optional Ingredients1can chickpeaInstructionsPrepare the CucumberCut the cucumber in half lengthwise and hit or press it with the flat side of a knife. Cut into bite-sized cubes.Salt and let drain for 20 minutes.SauceThrow everything into the blender and puree. Alternatively, finely grate/chop the ginger and clove of garlic and mix with the liquid ingredients.If the sauce is too thick, add a little pasta water.Cooking PastaCook the 1serving glass noodle for 2-3 minutes.If necessary, heat the chickpea. Rinse everything with cold water.PlatingPlace the 1plate glass noodle (and 1plate chickpea) on a plate and sauce them.Pat cucumber dry and mix it with soy sauce.Add cucumber on top and enjoy.
